
Hi, I’m Jessica DiFalco, the baker and fouder behind Willow Cottage Bakery LLC.
My journey with baking began over 25 years ago, though its roots stretch even further back—to childhood afternoons spent in my grandmother Almarina’s kitchen. The women in my family—my grandmothers and my mother—were gifted cooks and intuitive bakers who approached food as a sensory craft. They taught me to notice the subtle shifts in a sauce’s color, to wait for the fragrance that signals a cookie’s golden edge, to listen for the hush that means something is done just right.
That reverence for detail has never left me. As a teenager, I became devoted to the study of baking—exploring techniques, experimenting with flavors, and reading everything I could get my hands on. Over the years, I’ve completed certificate courses at the French Culinary Institute and pursued additional training, including an intensive biscotti and cookie program at the Institute of Culinary Education. Still, my most meaningful lessons have always come from exploring flavor profiles and novel ingredients in my travels, practice, patience, and the quiet magic of repetition.
Willow Cottage Bakery is my expression of that lifelong devotion. Here, old-world traditions meet modern, global curiosity. Each creation is crafted with intention—designed to evoke comfort, delight, and a sense of something both timeless and new.
